How can I control what bib record content displays in the brief record in my results list?

You can edit what displays in the brief record display in Discovery>Display Configuration>Configure Views>Brief Record Display tab:
You have four lines that you can use to add content, and you can put multiple pieces of content on one line, separated by a or whatever you choose to use as a divider.
Note that if you choose to include the record description or contributors, you may end up with long chunks of text in the brief record. There is no way to shorten that field or hide the extra content with a "more" link, but there have been ideas submitted to Idea Exchange asking for this option.
